INGREDIENTS
Marinade
• Juice of 2 Lemons
• 1/2 Cup Parsley, Chopped
• 5 Tablespoons Olive Oil
• 1/2 Cup Balsamic Vinegar
• 1 Tablespoon Garlic Powder
• Salt and Pepper (to taste)
• 1 Tablespoon of Mint, Chopped
• 1 Tablespoon of Coriander, Chopped
Chicken
• 4 Lbs Chicken Breast
• 2 Tablespoons of Butter
• 1 can of Chopped Tomato
PREPARATION
Prepare Marinade and add to Chicken breast, cut into strips in a Medium sized baking tray. Leave for at least 5 hours to marinade (Overnight may be best). After marinading drain chicken from marinade (be sure to keep the drained marinade) and braze with butter in a wok on medium heat for 8 mins. Then add the marinade and chopped tomato. Cook on medium heat for a further 30 minutes until the sauce goes a dark red.
