Cassava and Sweet Potato with Coconut Gravy
INGREDIENTS
• 5 Medium Sized Cassavas
• 3 Large Sweet Potatoes
• 5 Table spoons of Palm/Sunflower Oil

PREPARATION
For the Gravy
• Half Cup Chopped Tomatoes
• Two Tins of Coconut Milk
• 3 Table Spoons of Curry paste

Roasted Cassava and Sweet Potato
Cut Cassava horizontally into thick (4 cm) slices. Quarter each Sweet Potato. Place in 2 large baking trays and add oil, making sure to apply it as evenly as possible. Add to an Oven and cook for 1 hr 15 mins at 250 C.

Gravy
Add all ingredients together and keep on a simmering heat for 15 minutes stirring it every 2 minutes.
